I would think moderate wobble or more would make the knife feel less secure in your hand. This could increase the probability you would cut yourself and make the cut less perfect if going along a straight line. Sharpness should increase performance . Difficult material to cut should decrease perform...

I was a little lost on the OP. I have found diluting mustard with a small amount of lemon juice works well. I leave it set for a small amount of time ( 5-7 min.), wash it off, then reapply until I get the patina I like. This composition allows me to apply the acid exactly where I want it. I am not m...

Either go to a knife show this spring/summer and talk to a guy who has a load of new knives with
boxes or look on eBay doing the same. It will not be an easy if going thru eBay.
