I use a lot of various old knives that were already pre used, but if they have the factory edges using it is off limits, sometimes exceptions but usually not.

Paul, that Ulster is a beautiful knife, great bone.
Went to a small local knife show today and picked up a 1/2 dozen or so interesting knives. one is a Wards stag handled cattle knife, most early Wards were made by Winchester. Knife is well worn but still has great snap and no play, the stag is very well done, bolster to bolster, sure wish they fitted stag like this today. Early American made stag knives are not common so I was a little surprised to stumble upon this one.

Next is one you don't see a lot of, Buffalo Cut.Co.Pattern# DE 1930.Looks like a Diamond Edge made by Schrade. All the Buffalo Cuts I have seen appear to have been made by Schrade.
