Lee, I believe proud or exposed tips would be something that cutlers would avoid on a finished knife.
I think any exposed tip is due to sharpening. You see it a lot in these old knives and with the smaller knives, which were used heavily and therefor sharpened heavily, the narrow blades were more apt to have a proud tip.
This is just the way I interpret the issue of exposed tips. There are certainly other ways of thinking about it.
