Found another Cattaraugus yesterday.

Cattaraugus Kitchen Knife 13 1/4" OAL with a 8 1/8" Blade and maybe Rosewood Handles?

Any idea as to the age of this knife or any of the others shown above?

Thanks. No, I'm hoping someone will come along and answer that question.
Also looking for the handle material. Not sure if this is the original.

That hole is there so a chef can choke up on the knife and maintain a firm grip.
It's a balance thing... I couldn't find a good example in images but the idea is the same.

Approxiamte age of knives and handle material.

Info on the pictures above from May 2008. Top to bottom.
Case 417-6 w/wood handle 10 3/8" OAL and 5 7/8" Blade
Case 421 CP w/wood handle 6 7/8" OAL and 3 1/8" Blade
Cattaraugus Butcher knife 12 5/8" OAL and 7 7/8" Blade white synthetic handle
Cattaraugus Grapefruit knife 7 1/8" OAL and 3 7/16" Blade white synthetic handle
