Sounds like your blade edge is chipping. Some steels will do that under certain circumstances.

Do you know what type of blade steel the knife has?

It is more likely chatter while pulling your blade through. Those V sharpeners work better on softer blades. Nothing beats old fashioned flat retangular stones. They only require you to be able to repeat strokes at a constant angle.

Since you are in the sharpening forum try to research what others have accomplished by using stones.
You may find it very helpful; or not. Stones aren't for everybody. Give yourself an option to a different way of sharpening.

I agree with the comments made so far. Pull through sharpeners are not the best way to sharpen a blade - might be okay for kitchen knives, but there are better sharpeners, especially if things like serrations concern you. Flat rectangular stones work, have been proven to work for decades. “Stones” made from diamond plates are best IMHO. They’re not expensive, despite the diamonds.
As was recommended, read the threads here in the Sharpening Forum about use of natural, carborundum, and diamond stones. Lots of good info! ::tu::
