That looks excellent cudgee. Butter, olive oil and basic spices on fish is a winner every time.
And that for breakfast, we are cut from the same cloth.
Some people are OK with breakfast for dinner, but not dinner for breakfast. Don't get that personally as I eat anything good in the morning. Lunch or dinner dish or not.

Been on a pasta kick lately. Lots of dishes cooked I did not post.
I made an olive oil/ butter sauce with garlic, shallots, white onion, more garlic, various sweet and hot peppers mostly locally grown. Capellini aka Angel Hair as pasta. Olive oil fried breadcrumbs are next level accoutrement.

Stellar pasta dish. Basically a mashed broccoli with all the veggie goodies in the food processor. Some olive oil and pasta water. Second picture was a no carb option for a friend.
Cooked some ground lamb for garlic bread on roids tomorrow. A smoked reverse sear chuck roast as well.
Add Romano cheese and olive oil drizzle after plating. Cooked breadcrumbs at will in a sugar bowl or whatever you have.

Aforementioned garlic bread. Cooked just now. Added white onion, garlic, jalapeño and shallots. All raw, food processor
Ground lamb cooked yesterday, 1#. Bunch of parmesean and cooked breadcrumbs.
Looks darn good as a side to the broccoli pasta.

A friend brought me some quinces. Quince contains a lot of pectin and makes a great jelly.

Grilling some T-Bone steaks on the rocket stove. The hickory smelled great and put a nice char on the meat.

Yesterday was the day of St. Nicholas, the patron saint of sailors and fishermen, the prototype of Santa Claus. Traditionally, fish is eaten on this day.

Processed 2 venison hams today. The buck had a good bit of fat covering the hind quarters. We prefer to remove all fat from the deer we eat. Some folks choose to keep and use it but my late FIL, a butcher for many years told me almost 60 years ago that deer fat will go rancid very quickly plus it gives a waxy taste to some cuts of venison. Pork fat is different and that is what we add to make our ground meats, sausages, burgers, etc stick together. The Pork is usually in the form of Boston Butts.

My version of red mashed potatoes.

Garlic, shallots, white onion, red bell, butter, etc. All pictured veggies with red baby potatoes, skin on.

Salisbury Steak and homemade gravy is the plan today.

Made some souped up cucumber salad. Delicious. Cucumber, sweet peppers, celery, garlic, red onion, jalapeño, habenero, spices, lime zest and juice, etc.

Thanks Phillip!

The habanero added flavor. It was not a "bite hot" mix. Had a mild heat after taste. Delicious.

Made some paint off the hood salsa as well. Still mild lasting heat.

Made a reverse sear smoked tri tip just now to go with it. I cook to under doneness to allow for sear and reheat adding to doneness.. Or cold eat rare. A good slab.
