Looks like a nice outing, O.H.
You know what they say when it's cold, foggy and spitting rain; nice weather to be a duck!
Well, on Sunday I finally got around to making my venison chili, using a little of both recipes you guys graciously posted.
Here's what I started with;

Then I washed, sliced and got everything ready to go;

Ol' Jezebel would have come in handy.
First I browned the cubed deer meat with onions and chili powder;

Then I added a quart of my Mom's tomatoes, All Spice & Cumin (between each step I waited until the chili came back up to a simmer on medium heat);

Then I added 3 cans of beans, a sprinkle of cinnamon and the beer;

Followed by 5 poblano, 2 jalapeno and 1 habanero pepper;

Reduced the heat to a nice simmer and started watching Jeremiah Johnson. 3 1/2 hours later;
I lined a bowl with Fritos Scoups and time to dig in! Man was it good.

That chili looks delicious!
We do our own venison processing and was wondering what cut makes the deer tips? I googled deer tips and all I got was hunting tips

That's what my brother-in-law labeled as pieces of meat not big enough for steaks, roasts and such. I cut each of his "tips" 3 or 4 times to come up with what I call "cubes." I prefer cubed meat to ground meat when it comes to chili. Boy was it tender.
TripleF, I did freeze a quart so if you're ever in the DC area. Just don't wait too long or it will be gone! I have some frozen morel soup too, beef chili and butternut squash soup I made as well. Good stuff on a cold winter day.
Just wanted to add, it would be fairly easy to pack these ingredients for camping and cooking over an open fire. Now that would have been cool.

Thanks 1967redrider! I know where you are coming from. At our house everything that is not bonless fry meat(steak) or bonless chops(backstrap) gets made into ground meat or mixed with pork and becomes sausage. My wife liked the idea of the cubed meat for chili so we may try that, even with what tj said

Out on the lake ice fishing right now with my son.
Dad 2 fish.
Son no fish. Some slight razzing but all in fun.
Day is still young.
Buck 112 for reference. 19 inches and 3 pounds each. Cut bow trout.

I went through an awful lot of my knife money today - reacquired this pre-64 Winchester M70FW in 308 WIN from a buddy who I sold it to several years ago. It was built in 1953 and is just too nice not to regain ownership of (especially with all the anti-gun hysteria currently being whipped up by the obama administration). OH
