...I managed to snag this a few weeks ago. One arm jack with nice stag.

Nice one. I really like the Fight'n Rooster small curved Jacks. There are many different ones, some with caps, some without, and with pearl, jigged bone or Stag handles, single & double blade, with master as in O.P. knife, or clip or spearpoint.
This would be a fine pattern to collect.

There are a few Fight'n Roosters with the shield at the non-bolstered end; i.e. OP knife has shield in original position.

I managed to snag a matching stockman, also from 1987.

Truck, by "matching" do you mean both have stag handles ? or is there something else that makes them "matching" ?

In addition to the similar Stag, they were both made in 1987. Not of the same series though.
