All About Pocket Knives

Once again, I know y'all ain't quit eatin', let's share a few more ideas about what's on the supper table.
I made something called Taco Soup this evening with Miss Joy supervising. She has made this quick and easy one pot meal for several years. The ingredients are off the shelf or out of the freezer, here's how it went together: Browned about a pound and a half of homemade venison bulk sausage, sautéed a whole sliced onion, a package of frozen sliced bell peppers and a can of sliced mushrooms. To this we added a can of pinto beans, a couple of cans of corn, a large can of diced tomatoes and a small can of Rotel tomatoes, bring all this to a simmer, then add 2 packs of Hidden Valley Ranch dressing mix and a pack of taco seasoning. Stir the mess and then bring up the heat and serve with a big dollop of sour cream, some shredded cheese and corn chips and of course a big glass of ice tea .

Can't believe it's been nearly a year since anybody ate supper!

Visiting my niece and her family this evening. Her husband is a great cook and likes to experiment. Everything I've eaten that he has cooked has been excellent. He's also Catholic and has given up beef and pork for lent this year. So for supper this evening he made chicken meatloaf! Have to admit I skeptical but as usual it was great.

Grilled pork chops, cream peas, cornbread, sliced tomatoes, sliced red onion, yellow crookneck squash. Peach cobbler for dessert. Washed down with iced tea. The cream peas, tomatoes, squash, onions, and the peaches in the cobbler all came fresh from the garden. This is a great time of year for eating!

Ken, that sound so good. raising your own food just tastes better than store bought.

Miss Joy and I had a pretty big dinner, some brisket, some corn, some rice, etc.., so for supper she says, "How about a 'mater sandwich?" We've been enjoyin' the tomatoes from the garden for several weeks. I told her to let me make my own sandwich tonight. So against all common sense which is displayed here on AAPK on a regular basis, I made my 'mater sandwich with French's Mustard rather than the commonly approved Dukes Mayonnaise. It was different, not as smooth and creamy, kinda' tart and I liked it! I will try it again.
Here's what it looked like goin' together.
What do y'all think of that big one in the back ground? It's a handful, 16 1/2" circumference! All the rest have been normal size.

Swap that French's for some stone ground and I'd be right there with ya!

Jane was burning some brush in the back yard so I brought down a couple polish and some leftover chicken salad and we snacked sitting around the fire. No meal in front of the TV tonight. ___Dave

That's a mighty handsome 'mater there Philip! We don't get many that big in Texas. Those big fruit varieties don't set fruit well when it gets above 90 degrees so most folks around here plant varieties that make a lot of tennis ball size 'maters. There's a lot of varieties that do well here though.

Man Phillip, that tomato is a plumper! My plants are just now starting to set fruit, so I am a month out yet I bet until we have any ripe ones. I am salivating just thinking of it. Can't say as I've ever had a mater sandwich with mustard though, might be worth a shot! I had some spicy brown horseradish mustard on my chicken sandwich for supper tonight, and man that stuff was sharp!

What did I have for supper tonight ? Well, no pictures to prove it, but I had meatloaf, mashed potatoes, and green beans with country ham chips cooked with them. All were cooked by yours truly. One of my favorite meals.

As to that mustard on tomato sammich.............well I'd just have to try one to believe it was edible.

Here we go! Miss Joy sliced the big 'mater, one slice per sandwich. The flavor was not quite as good the regular sized tomatoes. Thought y'all might like to see what it looked like after it was butchered.

I don't know if it's my taste buds getting old or these hybridized maters but none taste as good to me as they use to.

I know a little bit about " Maters " .
People buy stuff with their eyes.......not taste.
So the farmers grow perfect looking maters, corn, melons etc., Because there is alot of manual labor/hard work involved they grow things that sell.
It is about Dollar$.
Now if you want taste or quality, buy or grow the old time "maters".

This even applies to just about everything anymore. Not just food products.

Doctor appointment today, hopefully.......

Me? We have potluck at church every Wednesday night, but I was a mite peckish before hand, so for a snack......buttermilk and cornbread. One of life’s great pleasures.

I like mine with a little salt and pepper in it. And in the spring a big ol green onion on the side is mighty fine too.

Intrigued with the corn bread and buttermilk, with have to go to Dr. Google. I currently have the oven heating up, tonight Baked chicken thigh fillets on the bone with baked potato chips.

Check it out. It is a rare treat and a little bit of an acquired taste. If you cook cornbread and if you have buttermilk on hand just crumble up some of the cornbread in a glass and cover it up with the buttermilk. Eat with a spoon. It is a traditional dish in our southern states and is usually eaten between meals or after a meal. Some, including my sister, prefer milk (sweet milk) to buttermilk but I much prefer buttermilk. I like my cornbread cooked very crispy, almost to the point of being burned and that, with buttermilk, makes a fine way to finish off a meal or a between meal snack.

Ray, I agree with your sister, I perfer sweet milk as well. Also good with white gravy. Mmmmm.

Can't go wrong with cornbread it's good anytime with anything. When I was a young feller my best buddy and I went to Nags Head North Carolina and spent a week with his aunt and uncle. She made cornbread every morning for breakfast with all the normal breakfast foods and I mean a spread. I thought I'd died and gone to heaven. Now my momma put on a good spread but it was biscuits for breakfast and cornbread for dinner and supper. I ain't never had a good biscuit that I liked better than a good hunk of cornbread but that's just me. Ymmv.

I too love cornbread. We had white beans and cornbread day before yesterday. Man that was good. Cornbread with butter and honey or sorghum is also a favorite.

That reminds me, here in KY, a delicacy amongst us po’ folk was peanut butter and syrup all mixed up with cornbread or biscuits crumbles up in it. Y’all ever eat that?

That sounds wonderful! My oldest boy makes chicken thighs in the oven with barbecue sauce and then fries potatoes in the side. As a matter of fact that’s what we’re having tonight. Delicious.

I love that with a hot biscuit crumbled up. I use left over biscuits with plenty of butter involved.
