All About Pocket Knives

My Buddy bought a "Cheapo" (in Spanish "El cheapo") Chi-Com cleaver. I was over at his house for a cookout and I saw with my own eyes when he smacked down on the ribs to cut the rack... and bam!!! A big 'ol chip on the blade He hit it a few more times and could not believe it SABATIER Rowoco INOX Cleaver 6 inch Blade Made in France::facepalm:: . He threw the cleaver in the trash. I retrieved it ... I had to post the picture of next to my SABATIER Rowoco #51 Cleaver Made in France. ......... Not that expensive, but a LOT BETTER QUALITY!!!

Dalstrong Obliterator

I bought this with the intent of using it to cut up meat, but it is absurdly large and heavy. It might be useful for butchering a rhinoceros.

Here is the K&T Dunston cleaver after rust removal clean up.

Looking online for something else I found this nice piece of ephemera. It a retailer's Foster Bros. label in green ink, securing wrapping paper around presumably a Foster Bros. cleaver.

Arrow trademarks must have been popular. Offhand I can think of John Russell Co. that sometimes used it, and Parker Brothers, the Meridan, CT gunmaker, as stamped on barrel ribs.

late entry: I see that Friedrich Dick, of Esslingen, Germany, used the arrow mark as well. There must be many more that do.

I have had these a long time. Trying to decide what to do with them.

Those look like pretty interesting restoration projects

I’m not really a kitchen knife guy but I may try to restore these and enjoy them.

I found this the other day and have been working on restoring it. Cleaning with the wire wheel/grinder and a vinegar bath to start things off.

Always amazed at what I have missed on the forum!
We got tons of kitchen knives and I don't know what constitutes a Chef knife but I do know what a Cleaver is.
I made one many years ago out of an old crosscut saw blade, it comes in handy regularly in the kitchen mostly cutting vegetables. I thought I needed a heavier one and made a deal with Jerryd6818 some years ago. Can't remember the trade. It's a Case 674 stainless but I really don't ever use it. My late Father in law was a butcher and he remarked that he was glad to see the power saws become available for splitting beef and pork carcasses. He said he didn't remember what became of the one he had. It was large and heavy, took 2 hands to operate he said.
I can't imagine using one on a deer nowadays when a sawzall is available. Treefarmer

Interesting post T.F. and a good-looking handmade cleaver you put together I miss a lot on the forum as well ... One needs 12 hours a day at least to keep up with everything ....

I bought a raffle ticket at a local community fund raiser a few years ago. All the knives pictured below are what I won. All are Made In China. Still, not bad for a $1.00 raffle ticket.
The cleaver total length is 7 1/2", the blade is 3 3/4" long, and 2" wide.

Picked this one up today. Clean up soon.

Here is a pickup from last Sunday

Top is a beauty.1839 to1886. Bottom is a lf and c. Picked the beaty at little valley show, other at antique shop which had several to pick from.
