Hey mike, my Dad,( God rest his soul) use to grow some crazy hot peppers in his garden when I was a kid. It was a big deal at dinner time when Dad would challenge his three boys to a pepper eating contest. One bite was all that was required but my God the damage that one small bite would do. Dad could eat a whole pepper and never flinch. Good times!

Rocky, that is a cool story about your Dad...funny how different people have different tolerances to the heat of chile peppers. I have found though that you can build up a tolerance over time if you work at it. Working in kitchens my whole life with a lot of Mexicans, I can take the heat pretty well myself...although I have never been one to enjoy just taking down a whole habanero straight! But I love incorporating the hot stuff into my food and sauces...just not a fan of "bland" food at all.

I know what you mean Mike, I prefer spicy or we'll flavored foods but my wife and middle child, bland all the way not even a little salt and pepper? Go figure.

Yeah, that knife is a STUD MUHGILLA! Fills the hand. Blade is not too long.

Here's my secret.....I start with a "fire rich" knife, then......I hold a multi bulb LED light over it or off to the side or underneath...or whatever position it takes to make it "pop", then wah-lah.
