The Good Lord blessed us with another deer, for the freezer Monday afternoon. This little buck was as fat as a pig. He was full of "leaf lard" if y'all know what that is. Killed him in the corn patch, saw him pile up, went to the house and got my wifes' dog and let her "find" another one, took just a few seconds to get the scent and a short track to the 4 point.

"Leaf lard" is the description of the fat around the kidneys and other organs in the abdominal cavity of a hog. It is supposed to be the highest and best grade of lard found in or on a hog.( Most folks dont use hog lard anymore). In this little buck deer there were gobs of fat similar to what was just described. We try to remove ALL fat from a deer as it seems to become rancid more quickly than pork fat or beef tallow. Making sausage we use 60% venison and 40% fatty Boston Butts.

I have used lard in the past in my cooking. Lately I use chicken fat and butter but I need to stray from that too.
Your sausage sounds good. I roast a pork butt from time to time; it's actually a shoulder.

FRJ, The Boston Butt is a pork shoulder, usually has just a small piece of blade bone in it. Butts are very popular to smoke whole and here stores will slice butts into strips and call the "country style ribs" for BBQ. Not quite the same as a real pork rib as it has no bone to chew on ! Very seldom do we use any thing but corn oil and olive oil for cooking. Supposed to be more healthy .

I don't know if you could make it? Some of the pictures I've seen on your "Steel salute knife blog" show you with a big cigar. Can you stay away from one of the things long enough to wait on Bambi?

And about that license thing, If you were as old as me, you don't even need one. I read on the Florida Wildlfe Commission site that a "Resident Senior Citizen Certificate" was available at the county tax collectors office for those over 65. When I went to get mine, they said just show the game warden your drivers license 'cause we don't have those licenses.

Seriously my friend, if we lived closer we could probably figure out how to go on a safari together. I mostly hunt in the afternoon, about an hour before dark, sit and watch a food plot to see who shows up. Sometimes it is a constant parade and some seasons they are almost totally nocturnal. I've got a camera on a crossing that proves they don't have a regular schedule. I usually kill 4 or 5 each season and about every 3 years or so a "good one" shows up .Here is a picture of a few visitors a few weeks back.

Yes sir....always a cigar burning......good thing is; cigars only bother the mojo of the hunters, cuz the deer sho don't know enough to be alarmed by it...

My grandsons have moved on from Eeeeeewe.....to OWI (Official Worm Inspectors).

Reminds me of my son. When he was about six he said, "You were in the Army weren't you dad?"

I said, "Not the Army." Trying to give a hint, I said, "It starts with an M."

Aha yes, boys and worms. It doesn’t take them long to figure if you can catch a fish on a worm it must be a “good thing!”

When my oldest boy was about 3 I washed the car and when I dumped the wash water some got on the grass. Well, of course the worms didn’t like that and came right up out of the ground. So my son was says, “Look Papa, worms!”

I was busy & didn’t pay much attention, but he was busy gathering up the worms. When his mom came out to see what we were doing he hollers, “Look Mom!” and waves a handful of worms in front of her.

The worms not liking the soap on their skin nor appreciating the small 3 year old hand holding them, were doing their very best to escape, as a result his little hand looks like a Hydra head made of worms. His mom gave a yelp and jumped back, and he said with a hint of distain in his voice, “But they are just worms, Mom!”

Great memories of my boys, worms and fishing!

Scott, I just have a feeling that even if you were presented with an opportunity to leave Florida, you wouldn't move away from your grandsons.

There's something awfully special about those characters.

You are 110% correct Jerry, but I'd definitely sign up for the snowbird lifestyle!!!

Then I'd have them come spend the summers with me in upstate NY and we'd live in the woods!!!

Just returned Sunday morning from a duck hunting trip to Eastern Arkansas (Brinkley area). Hunted Thursday afternoon, Friday, and Saturday morning. Weather was warm and muggy, drizzle on Thursday, nice on Friday, good, steady rain on Saturday, but the ducks didn't mind any of the variations and flew pretty good (didn't decoy worth a damn, but flew!!) Every duck shot was a pass shot; we had a blast - long, long drive, but worth it. Looking forward to next year. OH

You guys are killing me with these descriptions of warm and muggy, etc. We have had 8 inches of snow on the ground since Christmas day. Not a flake has melted as the highest day temp since then was 30 degrees, normally 15 or 20 degrees. Last night was -21 degrees. I don't mind the cold too much but I got mild frostbite years ago and no fun hunting when you can't feel your fingers.

Ps A little cooler would be nice for ducks, but it was nice not to have cold feet from all the time standing in water.
