Hey, did y'all quit eatin? Has it been over 7 months since anybody had somethin' good for supper?

Bein' the old cheapskate that I am, I decided to fix some venison tenderloins for our pre-Valentine supper. When I slipped off to town to get some flowers and a card for Miss Joy, I also went to the Piggly Wiggly and got a pound of sliced smoked bacon. All the restaurants in our little county would be full tonight and so to eliminate all the hassle, we'd do our supper up just right at home.

Told her my plans and she says she could make a quick stir fry to go along with the broiled tenderloins. It came together, tasted great and she even put a pumpkin' pound cake in the oven for tomorrow.

The tenderloins were seasoned with Everglades Seasoning, wrapped in bacon and broiled for 4 minutes, then turned for another 4 minutes under the broiler. In my book it is just hard to find a piece of meat that is as fine grained and tender as a venison tenderloin. Backstraps are wonderful but they don't hold a candle to these.

I used to cook a lot more, haven't felt like it much since the head injury.

It is cold here--maybe 15 degrees F, with strong winds--so I mixed up some soup. Took a few cups of chicken bouillon, added some powdered sun-dried tomatos and let it simmer for a while. Put a shot of olive oil in a skillet, added a teaspoon of minced garlic and cooked it til the garlic was translucent, then added a couple of diced chicken breasts and a teaspoon of crushed dried pepper. When the chicken browned, I stirred in the bouillon and brought it to a simmer. Added a cup of rotini pasta and a half-cup of rice, and let it cook for 15 minutes. The result is a chunky soup, spicy enough to warm you up even on a cold day.

Last month my only really memorable meal was the night after my birthday, when I made an actual "meal" of three courses: a wild rice risotto topped with bagna cauda, venison fillet aux herbs (dried rosemary, crushed juniper berries and green peppercorns (would have been better with black peppercorns soaked in tequila, but I had none prepared), and an improvised strawberry-pineapple-banana sorbet served with espresso. I used to cook like that 2-3 times a week; I sometimes miss those days.

Wow! There's some impressive cooking going on here. Philip and Jim, y'all both are flinging a cravin' on me!

I chicken-fried up the last of my pheasant and quail for dinner last night. No more till next fall.

My sister works at Bonnell's in Fort Worth, and she gave me some cheesy-grits from there. We had those along with the pheasant. mmmmm--good! Bonnell's is the #2 restaurant in the DFW metroplex according to Zagat. I haven't ever eaten there, but plan to take the bride one of these days when we are up in Fort Worth.

They have a pretty unique menu.....lot's of game on it - duck, elk, pheasant, buffalo, boar, venison, quail, etc

Last night I cooked a pot roast in the crock pot. Tonight I had pot roast sammich and fresh boiled beets. The beets were so good I didn't even put butter on them!

Reminds me of years ago before I was married, I shared a rent house with a guy that was Daniel Boone re-incarnated. He'd disappear for several days and go live in the outdoors hunting, fishing and trapping. Wore knee high leather moccasins, etc. I came home one day, went into the kitchen and saw him standing at the stove cooking. "Smells good" I said.

"Sit down, I'll fix you a plate" he said. Handed me a plate filled with greens, potatoes and gravy, and what I assumed was fried squirrel. It was delicious!

I said "sure is good squirrel."

"It ain't squirrel."

"It was good. What is it?"

"There's three more of them laying on the back porch."

I got up, went to the porch and there was three dead nutria. I haven't eaten any since but I wouldn't turn it down if offered. It was good!

I've never ate possum, but old folks here used to eat possum and sweet taters. Don't know as I'd care to.

Tonight it's roast cooked in mushroom gravey and butter. And whatever else Precious fixes up.

Man, you fellas eat a lot different than I.

We're having roasted vegetables and kielbasi tonight.....kinda like a hobo meal, just cooked in the oven, not over an open fire.

possum aint bad, not something I'd choose to eat every single night but just like coon, groundhog, muskrat or anything else it's good to have in the mix!

That reminds me of a story my dad told me about when he was a boy. In the winter he would run his trap line every morning before school, and cook up what he caught for breakfast that morning before catching the bus. That morning he caught a few muskrats, and fried them up with biscuits and gravy. In health class that day they were discussing nutrition, the teacher was asking each student what they had eaten for breakfast. All the usual suspects, eggs & toast, cereal, etc. When he called on my dad without thinking twice he blurted out "fried rat and cats heads". Naturally the teacher didn't believe him and asked him to repeat what he had for breakfast and he said again "fried rat and cats heads". The teacher went ballistic and ended up sending him to the principals office because he thought he was just being disruptive. They brought in the teacher, a couple staff members and also the school nurse because they really thought that he thought that he had eaten fried rat and a cats head for breakfast. After some arguing he said something to the effect of " Aren't any of you from the country? I know you've had to hear of people eating fried muskrat and cats head biscuits! "

Mystery solved.
