There is a bit of a myth about the sanding process, a lot of people think that you have to sand it down to a smooth finish, you don't. You just sand it back to knock the edge off the ' pebbly ' texture and it only takes about 10 minutes. All this does is hastens the smoothing out of the texture eventually as you mentioned. You don't have to sand it, it just speeds up the process that is all, because all you are doing is knocking off the edge off it so to speak. The generations that went before us knew, cast iron is the way to go, mind you, they probably did not realize it at the time, because that was all they had to cook with. I agree, and LOVE cooking in a cast iron skillet! Being a Southerner in the USA, there is not another way to cook cornbread!
I have never sanded a skillet smooth first, though I have heard from others who have. The factory 'pebbly' texture smooths out eventually, after a lot of use.
I live less than an hour from the Lodge factory, and have occasionally bought Second-quality items from their outlet store. They have great prices on pieces with a blemish on the outside.
