John, you've posted some beautiful pictures of the trails in your neck of the woods. Only two things I see wrong is that it appears to be way to cold and also way to hilly for a feller used to the flat lands of Florida!

My outdoor activities today were to finish up processing the deer from the 27th and then head to the woods about 4pm. At 4pm, I was still processing the deer. Normally the job would have been done, the meat vacuumed and, in the freezer, but there was so much fat to remove in order to salvage the lean meat, it took all-day!
A couple of pages back I had some pictures of the outer covering of fat, here are a couple of what I encountered as I was processing this pig: Sausage meat is in the freezer, the boneless chops and the fry meat from the hams still have to be vacuum sealed. That's a job for tomorrow after church, dinner and the Sunday afternoon nap!

Zed, your photos have an unusually rich "texture" to them. Did you accomplish this by design or by accident?

Really nice pics everyone. Phillip those are some serious slabs of fat on that venison, never seen that, even up here in Wisconsin where it gets cold. Are you going to render any of that down?

Zed I like the looks of that camp set you got, looks really well made. What do you use for a fuel source with that?

Garry.. Alleghany River.. They call that area Alleghany Gorge.. 480 feet from the over look to the river.. The town you look at below in Kennerdale..

Mike, we have always discarded the venison fat.
Since you asked, I did a little research and found several interesting facts I was not aware of. The traditional problem with venison fat is that it will go rancid very quickly even in the freezer, freezer life is about 6 months according to an article I just read. Maybe being in the South with the warmer conditions is why traditionally folks have never had good results with venison fat.
I found there are many uses and some good benefits when consuming venison fat, it is very high in omega-3 fatty acids and has high amounts of stearic acid which is supposed to be good for our cholesterol. It is also good for soap and candle making, waterproofing for your boots, the list goes on, winter feed for birds....
What the deer has been eating has a great deal of influence on how the taste may be. It is not recommended to use in some drier sausages, summer sausage in our case.
I killed another extremely fat deer several years ago, not quite the pig this one was, both were full of "leaf lard" inside the body cavity and the hams were wrapped in a generous amount of fat. This last one had so much fat it was a long tedious job salvaging lean scrap meat for grinding.
Sorry to say, all we did with the fat, bones and offal was to feed the buzzards and coyotes.

John I used it again today while I was restoring a few antique pocket knives , took about 3mins to boil with just cardboard
