the old henckels is about 11.5 in. long & inscribed ---for cutting not chopping. i believe the butchers called these breaking knifes. the other 2 handle most home chores. the oriental is a murry carter hand forged with the snakewood handle parer in m4 by phillip dobson.---HiPower
