Best chicken I've ever tasted!

My wife makes this in a cast iron dutch oven using charcoal brickets, but it can be cooked in a cassarole dish in a conventional oven or in a crock pot. Probably my favorite chicken recipe ever!

Ingredients:

6 chicken breasts , boneless, skinless.
1 jar, 8 oz. apricot jam or preserves
1 jar, 8 oz. Catalina (or Russian) salad dressing. Personally, I prefer Catalina.
1 package of dry Lipton onion soup mix.

Brown chicken, mix other ingredients and pour over chicken and cook for about one hour.

Other chicken parts or a whole chicken can be used, just be sure chicken is well done.

Serve with steamed or wild rice. The sauce left over from cooking the chicken is wonderful spooned over the rice!

You have a deal Ken. Next time she cooks it, you'll definitely get an invite....and, yep....she puts brickets on top and underneath, too. Don't know the exact number, but I think it's 8-10 underneath and 10-12 on top. Give it a try....it's a guaranteed winner, whether with a redhead or not! :mrgreen:
