Anyone know when Remington stopped producing butcher knives?

Pretty sure it was when Pal bought them out in 1940

I agree. Remington quit the cutlery business when they sold their whole operation to Pal in 1940 and Pal moved all the equipment out of the Remington Bridgeport factory. Remington never manufactured any knives after that. There are knives that were assembled by Pal from original leftover Remington parts so there could have been some butcher knives marked Remington put together by Pal for a year or two after the purchase, but the general break-off date is 1940.
