All About Pocket Knives

This knife belonged to either my great grandpa or my great great grandpa and I can't identify it
The only marking is on the blade it says stainless steal

Because it has blades that open from both sides, I believe it would be called a lobster pattern gents knife? Does it have any markings stamped onto the tangs of the blades?

Without some kind of marking on the knife, it will be very hard to identify a maker. Here's a thread on "lobster pattern" knives - the definition of a "lobster" seems pretty loose - it's kinda one of those "I know it when I see it" kind of things...

A "Lobster" knife has the springs running along the center line so blades can be on both top and bottom 'decks'.
What does the handle material seem to be ?
Stainless steel did not come into much use until 1930's but likely your knife was made after WW II Quite a few 4 blade Lobsters with a flat square handle and only marked "Stainless Steel" came from Japan beginning about early 1970's. Could there be a very faint "Japan" marking at the base of one of the blades ? Use a loupe to examine it. Often brings out something not seen with just your eyes.

The handle seems to be artificial leather. After closer inspection it does say Japan on the blade

If it just says "Japan", it was made after 1952. Items made in Japan between 1945 and 1952 were marked "Made in Occupied Japan".
