Old Taylor kitchen knife a fork and small spoon type

Over the years of traveling about sometimes you find some unusual older items...I'm showing 4 items that I've found at different locations
1) a large knife used about 12 inches total....marked ( Henry M Taylor & brother...? Sheffield)....V crown R is above the stamp
2) a smaller knife well used about 7.5 inches no name but nice design on handle
3) a old fork about 8.5 inches 2 prong no name very good condition for age
4) a small spoon type tool no name.. 5.5 inches nicely tapered with a hole in the center good condition
I don't know the age of these items but have been told they could date back to the civil war or not lol!!
I would like some more information on these items thanks in advance

Tweedale's Directory of Sheffield Cutlery Manufacturers gives a nice history of a H. H. Taylor. A Henry H. Taylor; I wonder if that could be your guy.
Henry H. Taylor & Brother were a cutlery merchant and manufacturer at Times Works, Paradise Street. Apparently in Sheffield.
Your knives and fork and maybe your mellon spoon (I think that's what that is) appear to have bone handles. Nice old stuff.
Does the carving knife have a tapered tang?

The small soon with the hole in the center is a melon baller, makes decorative balls for salads and stuff, also butter balls.

The handles are bone on the two knives and fork....on the melon spoon I can't say for sure it could be wood....Are there any way to test without
damaging the handle?...Is the Taylor knife referred to as the carving knife?....Not sure how I can tell if the tang is tapered...
Upon closer examination that is correct the name is..(Henry H Taylor & Brother)... Any idea about the initials... (V R and symbol)...above the name?
As these pieces were found in different locations and unmarked it's hard to reference what time period they may be from!!

The V(crown)R indicates they were made during the reign of Queen Victoria(1837-1901).

Thank you that allows me to get a time period for knife
