Always amazed at what I have missed on the forum!
We got tons of kitchen knives and I don't know what constitutes a Chef knife but I do know what a Cleaver is.
I made one many years ago out of an old crosscut saw blade, it comes in handy regularly in the kitchen mostly cutting vegetables. I thought I needed a heavier one and made a deal with Jerryd6818 some years ago. Can't remember the trade.

It's a Case 674 stainless but I really don't ever use it. My late Father in law was a butcher and he remarked that he was glad to see the power saws become available for splitting beef and pork carcasses. He said he didn't remember what became of the one he had. It was large and heavy, took 2 hands to operate he said.
I can't imagine using one on a deer nowadays when a sawzall is available.
