This recipe is close to the way we do it, Jerry. 'Cept the first order of business is to throw a stick of butter into the pot before it boils. Being from/in Maryland when we do this, we use Old Bay. Our favorite pork/sausage is Kielbasa. We get our sweet corn freshly picked from a guy up on Irons Mountain, Paul Rice. He has the best sweet corn in Cumberland. ::nod::

Trying mix of Lumberjack Mesquite and Oak. Separate bags.
Full 16# packer brisket. Sprayed with duck fat and coated with Meat Church's Holy Cow, my default all purpose rub. Peach paper wrap at 160 IT before the stall.
Overnighter. Likely 17 hour cook. 3 hour rest in dry YETI cooler before carving.

That second pic shows how much smoke these pellets put out. Blows Traeger pellets out of the water.

Actually, one of my few weaknesses. I can't resist a good Red Blooded American cookout.
Keeps me out of the bars. (sometimes)

I enjoy knocking back a few with the dogs while doing so. Even in winter, but prefer the nice weather that we are transitioning to right now in the high desert. Hot one day, rain and cold the next...

Yes Sir cudgee! Mainly because it sounds sexy is my thought. Believe myself that half that claim that don't live it. Seen it firsthand.
Red meat and good bread. Breakfast of Champions.
Almost 11pm here. Just used more more 100% duck fat spray. IT about 140 now. Low and slow all night. Wrap at 160 in peach paper likely. Smoker at 180 and blinding smoke.

Been cooking 6.5 hours now. Long way to go.

14.5 hours into likely 17 hour cook which is my personal sweet spot. Then 3 hour YETI dry cooler rest wrapped in a bath towel. (never opening cooler). Carve and serve.

Pics are before peach paper wrap and after. Got a good one on...

Not an app guy. Only app I use is Traeger WiFire app. Smoker connects to my wifi. I can change smoker temp, probe temp, monitor, keep warm, shut down from anywhere I have service. I get alerts on my phone when thresholds are met.
Meaning, I can monitor and adjust while away from home, at work. I love it.
More to follow on this 16 pound full packer...

Delicious. Excellent smoke ring, good amount of fat, etc. Think the 100% duck fat aerosol spray on top of rub added a special extra treat.

Last pic. Hosed down with duck fat spray.
Cooking crazy fast. Highest temperature I ever used on beef. Fine with that as far as time done.
Will reverse sear in broiler about 8 inches fron heating element for 5 minutes per side at 500 degrees.
A thick 4 pound chuck. There are 3 chuck cuts. This one is best. Right before ribeye on the spine below the neck. About 4 inches thick. 8 bucks a pound. Eat all week off it. Not adverse to beef/ good protein at 6am.

Survialist Bear Grylls recently came out to say, vegan and vegetarian made his body weak. He even wrote a book at one point about how sinister and evil meat eaters/ animal killers are. Had the guts to state publicly he was "wrong and embarrassed" for his book and previous stance.
I applaud him for his admission.

I like you believe each to their own, i try not to preach. But the science now shows that meat and proper fats are what our body needs and wants as fuel. The stuff they have been telling us for years about meat and fat killing us is just wrong and the latest research backs this up. When the human race evolved we survived on animal protein and fat, we stuffed it up years ago by starting to eat processed carbs and rubbish. And besides meat just tastes so good. :lol: :lol: :lol: ::tu::

All finished. Cooked at 300 which I never do on beef but did not want a 9pm finish.
Less smokey. Juicy as heck. Tasty.

As to your last response cudgee, can't agree more. Red meat, even pork or fowl, etc are essential to human life. If one does not consume both meat and especially fat, thay dwindle away slowly. I don't care how many vitamins or grass clippings one eats.
My nephew was in college in SF. Someone convinced him vegetarian was the way to go.
About 2 years in, I saw him. He looked like death warmed over. I was stunned. He realized that was not healthy. Started and resumed a normal human diet. Looks great now. 15 years later, Doc tells him to steer clear of meat now for medical reasons but he still partakes on a limited basis. Learned his lesson.
As I said, to each his own. Not judging. Not attacking Vegan, Vegetarian, Pescatarion or any others. Eat as you wish and I will do the same with or without anyone's approval. Ain't changing.
Just how I do it.

Edit: Under further review of my handiwork, what does the roast resemble prior to carving? I have some, mainly one idea.
