Sharpening Canal Street Knives

Former Schrade President Walley Gardner and principal Joe Hufnagel joined with nine master cutlers to form a group of US craftsmen with over 300 years of combined knife making experience to create Canal Street Cutlery. It was first located in upstate New York where a long and rich tradition of quality knife making dates back to the 19th century. Unfortunately, the company closed its doors in 2015, but not before making some great knives. The brand was resurrected in 2018 as Canal Street Cutlery Co-Op & focused on making very small batches of high quality traditional knives. As a Co-Op, it was owned by the knife makers who worked there. Unfortunately, the business model couldn't hold up & the entity again ceased production.

Sharpening Canal Street Knives

Just wondering about the experiences you all have had sharpening a Canal Street Knife. The rockwell hardness on these knives are pretty hard - Rc57 at the low end and Rc61 at the high end - I definitely have had folks unhappy using a stone to sharpen them, and stones are not recommended due to their hardness.

I carry a Canal Street congress. I do not know what the blade steel is because I got it without a box or paperwork. I suspect it is D2 but do not know that for certain. What I do know is that it takes some work to sharpen but once it's sharp it holds an edge for a long, long time.

An old F. Dick sharpening steel works well too.

I used diamond lansky system on the few that have run through my house. Never had an issue or thought it was bad. All mine were 154cm! ::ds::

Now Queen D2? That stuff is hard to sharpen! ::dang::

My Canal Street Pinch in D2 is actually pretty easy to sharpen. Now, the Queen in D2 ...
another story entirely. I had to use a belt sander.
