Sunday Dinner

That’s the second meal of the day for those if y’all who “ain’t from round here”. After Sunday meeting, this is what we feasted on. Fried catfish, fries, fried okra, slaw, and hush puppies. Mmmmmmmhmmmm. Most places in our fair land have their culinary specialties. Here, catfish and country ham are our two big ones. Do y’all like fried catfish?

I don't recall what I had there (or what I had yesterday) but I do recall it was "slap your mammy" good.

Looks good to me Wade! Fried catfish is very popular in these parts also. In fact there are several restaurants within less than an hour drive from our place, which all claim to be the best. All have their proponents and you can get some lively discussions between folks debating the merits of each. The fact is, they’re all good!

Gotta have some red sauce, sliced sweet onions, hush puppies, and some green tomato relish to go along with the catfish, slaw, French fries, fried okra, and pinto beans.

We have a place in Middle Tennessee called Slick Pig.... the BBQ is great but on Wednesday night they have AYCE catfish and all the trimmings!! My favorite meal at Slick Pig.

Ken that sounds a lot like how we eat catfish too. I love me some pinto beans and green tomato ketchup! But I’m curious about the red sauce. Is that like chili sauce from south of the border?

Wade, red sauce is ketchup and horseradish, with a dash of Worcestershire and a dash of tobasco. The base is ketchup. Then you add the other ingredients to taste. A generic red sauce in most restaurants is bland .mostly ketchup with a little horseradish) but they usually have the other stuff on the table so you can add it as you like.

My wife made pinto beans, cornbread, and boiled new potatoes. She mixed a can of corn into the cornbread. And she adds a lot of butter and seasoned salt to the boiled taters.

I’ve always been a fan of ketchup on my fried fish, but that concoctions sounds even better.

I’ve never seen a hornpout, but if it’s anything like a blue, channel, or flathead I bet it’s good.

My grandma, aunts, and momma would fry fish and make slaw, fried potatoes, and either hoecakes or hushpuppies. In the spring we’d have green onions alone with it too. Fine fine eating.

I have never had catfish and i have never seen it on a restaurant menu.
Is catfish like a sucker, rather oily flesh ?

I've never found it to be obnoxiously oily. However, it does have a very strong "fishy" taste.

KJ, Catfish are bottom feeders, but not suckers. Their flesh is light and tender - not oily. It is delicious fried or blackened.

We had a Cajun restaurant (Babin's) we ate at down in Houston every week or two. We always had two blackened catfish fillets, over dirty rice, covered in a lemon butter cream sauce with capers and crawfish. And then bread pudding covered in Bananas Foster for dessert.

Anybody here ever telephone for catfish? Ya take an old wall mounted crank phone and connect a couple of wires to it and throw the leads over opposite sides of the (wooden) boat. One to the positive and the other to the negative. Then someone sits there and cranks that phone like they're calling someone (Hey Mable!!!) and someone else dips them catfish up with a dip net as they roll to the top of the water. Some are too big and they will just lay down on the bottom and stir up the mud. If the game warden comes along, Pitch that phone over the side and get rid of it 'cause telephoning cat fish is against the law. Or at least it is/was in Illinois in the 50's.
