Workable wood

Hey guys, I just wanted to ask you, if I am going to order some handle blocks from texasknife.com, and i am
not using power tools, so i need something very fast to shape, with just files and sandpaper, what would you reccomend? (keep it cheap)

I would go to my local wood store and get some Cocobolo and see if I could find it close to the thickness I needed. That will save a lot of sanding.
