What am I looking at here?

The Remington Corporation and the knives that they built have influenced the U.S. cutlery industry more than nearly any other manufacturer. From the time America was settled, to the end of WWI, American knife companies struggled to compete with Britain and German imports, but events that occurred during and after the First World War led to a great change in this phenomenon. Unprecedented opportunities arose, and Remington stepped up to seize the moment. In the process, they created some of today's most prized collectables. In an ironic twist, the next World War played the greatest role in ending the company’s domination of the industry.

Any info on this knife? I've never seen a stainless steel Remington knife, it looks good. I do not believe it to be 20's era. Any info?

It has nickel silver handle scales and stainless steel blades. Blade etch is Remington over Stainless Steel. Take a lot at the circle Remington tang stamp and you will see the tiny S's inside the circle. That was also a marking unique to the stainless steel knives. I had one just like the one in your post. Here is a photo of a stainless of mine. It is also odd because the liners and tip bolsters are aluminum. They are original old time Remingtons.

I've read that Remington didn't start using stainless steel until 1939. If that's true, then there can't be a whole lot of them out there. I've got a few of them, all in bone or nickel silver scales.

The few I have seen had etched or inked pattern numbers in the R9000 range and don't show up in my collector books.

Mine that are nickel silvered are R9039. About half and half as far as inked to stamped pattern numbers.
