I like your review and analysis.
One point in your favor: I go to church with a man who is a farmer and a hunter, and he carries a utility knife similar to what you showed as a hunting knife. He uses it to skin Whitetail deer! He claims that it is much sharper than a regular hunting knife, and does what he needs it to do.
I know that he also owns some traditional knives, because I have repaired one or two for him, but he uses a utility knife around his farm.
I agree with you 100% that the look of a pocket knife is part of the appeal, and one reason that we don't all focus on "utilitarian-only" blades. I personally also use my pocket knives to clean my fingernails, and cut up food at mealtimes (using different blades!), and a utility knife does not do a great job at those tasks, but most people don't use them in that manner. And for people who cannot sharpen a knife . . . replaceable blades have great appeal.
